Dinner with Fancy Nancy

I am so excited when I have the opportunity to eat out, especially if it's home cookin'!  
Last Sunday I had dinner with Nancy and enjoyed every little aspect of it, from the fresh cherry tomatoes bought from the neighborhood outdoor market to the aesthetic magnificence of Nancy's adorable and chic Parisian apartment. 

The perfect starter course (wherever you are!):
assortment of cheeses, apricot jam, red wine, a vegetable added in there for some crunchiness,
& fresh baked french bread or a baguette:

great recipe to try at home and a particularly tasty option for vegetarians, like myself, we had cherry tomatoes, basil and mozzarella cheese over penne pasta for dinner.
 Fresh basil... there's nothing like it!

Delish!! See below for recipe instructions:
  • Cut the mozzarella into 1 cm dice, quarter the tomatoes and tear the basil leaves into shreds. 
  • When you drain the pasta, put a good quantity of oil into the hot pasta pan and heat through. 
  • Remove from the heat, add salt and black pepper, then toss the pasta (penne are good) thoroughly in this. 
  • Add the cheese, herbs and tomatoes and toss again. Serve at once in warm bowls. 
Somehow, this is the only photo I have of Nancy's place... next time I'm there, I'll be sure to take more photos (with permission, of course...) 

I am so thankful and grateful for my friendship with Nancy.  She is always a joy to spend time with and clearly, very gracious.  Thank you, Nancy.
